Not going to lie, I eat pretty much the same thing for breakfast every morning ⎯a big bowl of oats or a couple pieces of toast with toppings. I am a simple gal…at least when it comes to my mornings. I love routine, so switching up my breakfast would take a miracle.

That’s when I present to you this granola.

Granola doesn’t just have to be poured into a bowl with milk or yogurt. It has SO much more potential than that.

My favorite ways to enjoy granola are:

Sprinkle on toast. Smother nut butter on toasted bread or english muffin, top with fruit of choice (blueberries, bananas, raspberries), sprinkle on granola, and a dash of cinnamon.

Top on a smoothie bowl. A thick smoothie bowl is not complete without a crunchy topping. Top your creamy smoothie with fresh fruit, seeds or a nut butter, and granola.

Make a granola bar. Double the amount of wet ingredients in this recipe (coconut oil, banana, maple syrup, almond butter, and vanilla) then press into a loaf pan. Refrigerate for an hour to set then cut into bars.

Get creative!

Why You’ll Love This Oatmeal Raisin Granola:

Simple and quick to make. This oatmeal raisin granola contains simple, easy-to-find ingredients and utilizes pantry staples. All the ingredients are thrown together in one bowl, baked for 25 minutes, cooled for 10 minutes, and enjoyed.

Crunchy and clustery. I think we can all agree that the big clusters in granola are the best. This recipe does not fall short on the clusters.

Perfectly sweetened. No refined sugar in this recipe. All the sweetness comes from one ripe banana and maple syrup. I haven’t tried subbing the maple syrup for an additional banana, but if you want to eliminate the maple syrup, feel free to experiment! You just want the granola mixture to be wet enough to get crunchy when baked.

Gluten-free, vegan, and high in fiber. The oats and nuts are packed with fiber! Thanks to the oats and maple syrup instead of honey, this recipe is completely gluten-free and vegan. Make sure to purchase certified gluten-free oats if you’re celiac.
