What’s the difference between onion soup and french onion soup?
Onions are often included in soups as an easy flavor booster, and this particular ingredient has been used for centuries to add heartiness and complexity to a dish.
Onion soup is typically a light broth-based soup with cooked onions that may have some type of broth mixture (beef, chicken, vegetable, etc.), herbs, and other seasonings like garlic or salt added. French onion soup however is on a whole other level. It often starts with melted butter and oil is used to intensely caramelize the onions, sometimes along with garlic and/or herbs like thyme – followed by some type of stock or wine that further helps bring out the flavors even more.

Traditionally onion soup broth is made from beef stock. Not a fan of beef? No worries as you can easily use a vegetarian or even vegan version of broth instead! Keep in mind, you may need to use fresh herbs, spices, or celery for added flavor!

Can I use mozzarella instead of Gruyere in French onion soup?
Let’s talk cheese! I don’t know about you but when you add any warm melted to cheese to anything, I’m going to be a happy girl! haha Read on for why I believe Gruyere is the way to go for this recipe.
Though it may sound like a good idea to switch up the cheese used in French onion soup, understanding the differences between mozzarella and Gruyere is key. Mozzarella is a healthy dairy option – low in fat but high in protein – while Gruyere is a much harder cheese with a nuttier flavor. It might not be worth making the swap if you were looking for that cheesy layer of flavor on top, as mozzarella’s mild-tasting profile won’t add anything special to your soup.
